Where did salads come from? Who created them?

History records tell us that the origin of salads are traced back thousands of years ago to the ancient civilizations of the Egyptians, Romans, Greeks and Babylonians. In fact, the word “sal” in Latin means “salt.” That’s most likely because the dressing of that time was a mixture of oil and salt.

Salads at mealtimes started to become popular in the United States in the 1920s. The Caesar salad was actually created on July 4, 1924, by an Italian immigrant named Caesar Cardini in his restaurant in Tijuana, Mexico.

The U.S. Department of Agriculture imposed sanctions on United Vegetable Produce Inc. in Brooklyn, NY, for violating the Perishable Agricultural Commodities Act. These sanctions include barring the business and the principal operator of the business from engaging in PACA-licensed business or other activities without approval from USDA.

United Vegetable Produce Inc. failed to pay $100,025 to two sellers for produce that was purchased, received and accepted in interstate and foreign commerce from September 2017 to February 2020. This is in violation of the PACA. The company cannot operate in

Brighter Bites hosted a volunteer event of the recent Organic Produce Summit in Monterey, CA.

During the summit, volunteers came together to sort and pack fresh produce for 1,000 families in Monterey County across four sites, including Boys & Girls Club, YMCA, Frank Ledesma and First Tee. The families participating in the program received approximately 50 servings of fresh fruits and vegetables along with recipes and tips to encourage healthier eating habits and food choices.
